Situated in Lord Edward Street, Sligo, the Silver Apple opened November 2007 in the space long occupied by the Loft Restaurant, above the Gateway Bar. The best features of the space have been retained, such as the traditional stone walls, stained glass, and cosy banquettes. A quirky, continental feel has been created by the addition of bric a brac and original posters bought in antique markets in Paris, and by a totally new menu offering French style bistro cooking. As far as possible all dishes are produced in the restaurant kitchen using the best of local produce. She offers her own take on classics such as ‘Confit of Duck, Moules Mariniere and Crème Brulee’. Front of house is overseen by Christina Callaghan, former manager of Café Bar Deli, with her trademark friendliness, humour and efficiency. Above all the philosophy behind the restaurant is that good food need not cost the earth and prices are keen without compromising quality. Most main courses cost less than €19, and a great value early bird menu is available each evening until 7pm. Indeed one of the best selling dishes is a classic Beef Bourgignonne at €14 !
